Blend cashews, shredded coconut and oats in a food processor until roughly chopped.
Add the remaining ingredients (chia seeds, maple syrup, lemon zest and juice, vanilla extract, almond extract, and salt) to the food processor. Blend/pulse until all the ingredients are combined and a sticky mixture forms. Add in the blueberries and pulse a few times (don’t overblend so you can still see pieces of blueberry).
Use a tablespoon and roll the mixture with the palm of your hands to form balls. Store in an airtight container in the fridge for up to 7 days or freeze for up to 3 months.
