Ingredients
2 tbsp chia seeds + ¼ cup hot or boiling water
½ cup natural cashew butter (or other nut butters)
½ cup shredded coconut + ¼ cup shredded coconut for rolling the balls in
1 tbsp Matcha Powder
2 tbsp maple syrup
1 tsp ground cinnamon
½ tsp kosher salt
¼ cup dried wild blueberries
Directions
In a medium bowl, add chia seeds, boiling water and stir together. Let sit for at least 2 minutes to thicken.
Add cashew butter, coconut, Matcha powder, maple syrup, cinnamon, and salt. Mix together until thoroughly combined, then stir in the dried blueberries until well combined.
Scoop and roll into balls with hands. Place the balls in shredded coconut and roll around. Place in the fridge to chill for 2 hours.
Store in the fridge for one week or freezer for 2 months.
Recipe Note
Dried blueberries can be replaced with dried tart cherries or dried cranberries.
