Spring Strawberry Salad Jar

Ingredients

  • 1/4 cup of creamy balsamic dressing 
  • 1/3 cup cucumbers, cored and half-sphere chopped 
  • 1/3 cup strawberries, sliced 
  • 1/3 cup blueberries 
  • 1/3 cup garbanzo beans, drained 
  • ½ cup of tofu, cubed and lightly baked 
  • 1/3 cup cooked quinoa  
  • 1 cup fresh spinach 
  • ¼ cup pumpkin seeds 

Equipment

  • 1-quart sized mason jar

Directions

  1. Add creamy balsamic dressing to the bottom of the jar.
  2. Add in cucumbers, sliced strawberries, and blueberries as a next layer.
  3. Add in tofu, followed by cooked quinoa.
  4. Add garbanzo beans.
  5. Add spinach
  6. Top with pumpkin seeds
  7. Seal the jar with a lid and refrigerate until ready to enjoy. Use within 4 days for freshest salads.
  8. When ready to eat, flip the jar onto a plate and enjoy!
