The surprise and main ingredient of this recipe is silken tofu, which is high in fiber, giving this vegan mousse its silky texture. Dark chocolate is a great source of important brain healthy nutrients like magnesium, which supports memory and mood, and flavonoids, which are known for their potent antioxidant and anti-inflammatory properties that bring numerous benefits for reduced risk for cognitive decline.
If you don’t have silken tofu, use extra soft tofu by making sure you blend it thoroughly for that creamy sought after texture.
In a microwave, melt the 8 ounces of bittersweet chocolate and set aside.
In a separate bowl combine ½ cup coconut sugar and ¾ cup hot coffee and stir until the coconut sugar has fully dissolved in the mixture.
Pour the coconut sugar syrup into a blender and add the melted chocolate, 1-pound silken tofu, 1 teaspoon vanilla, and ¾ teaspoon kosher salt. Blend on a medium speed until the mixture is completely smooth, scraping down the sides of the blender a few times as needed.
Remove the mousse from the blender and divide it among four to six small bowls.
Top with chopped nuts of your choice.
Refrigerate the mousse for a minimum of an hour to firm it up before serving.

The vegan mousse can be made up to 4 days in advance. Simply store it in an airtight container in the refrigerator. When you are ready to serve, stir the mousse up for a smooth appearance before dividing it equally among four to six serving bowls.
